Today Ben shared his favorite cookie recipe with me. Ben calls them his Pancake Cookies. We started by creaming the butter and sugar until it was light and fluffy. Ben cracked the eggs and added them one at a time. He then added the ricotta cheese and vanilla. Next, Ben added the dry ingredients and mixed them till they were well incorporated. Ben scooped the dough onto a parchment paper lined baking sheet and baked them for 12 minutes. While the cookies were cooling Ben mixed up a delicious frosting. He then frosted his cookies and shared them with his friends.
