Today, Christopher made vanilla cupcakes. We used an almond flour base and added pumpkin to the base to cut out some of the fat. Christopher is really starting to pick up more skills in the kitchen.
Today, Jayne and I worked on baking. We prepped cookie dough and we discussed different ways to use our ingredients to alter the appearance by changing the cooking method. We used different tools to bake her cookies from cookie sheets to muffin tins giving the cookies a cake like texture while still being chewy and soft.
We followed up with plating. I taught her how to present her dish in a way everyone one would want to taste her beautiful creation.
Today, Christopher learned how to make gluten-free butter cookies. Christopher is very good at following directions. He executes every task and is a great listener. He was excited to learn a new recipe today which he shared with all. We ended our session with some sprint work outside.
Bobby and I created two different chocolate chip cookie recipes today in preparation for the cookie exchange. Bobby made a Chocolate chip cookie dough substituting the brown sugar for white sugar and put milk chocolate chips. He then prepared another Dough with brown sugar adding dark chocolate chips.
I had him explain to me what he thought the difference was, aside form the obvious color. We then discussed which one of the two he thought was healthier.
Elle and I worked on her recipe for her holiday cookies for the cookie exchange. Elle picked thumb print cookies. She chose three different fillings for the center of them, strawberry, grape and salted caramel.
Elle did a wonderful job with the execution of the recipe from start to finish. We worked on memorizing the ingrediants and why these ingredients were used and what purpose they served.
Christopher and I worked on making the dough and cookies for the Holiday cookie exchange. Christopher picked sugar cookies with a buttercream frosting and gold sprinkles. I taught him the importance of following directions and measuring.
Arianna and I made a delicious FRUIT SALAD today and talked about how to see if fruit is ripe or not..... and we discussed how to cut fruit correctly (pretty much any way you'd like....) we talked about sanitary practices with washing hands and keeping your work area clean and covered.
She labeled the different fruits and we discussed both the Spanish and English names of each one.
She also tried different fruits that she had never eaten....cantaloupe and watermelon.

Also, the discussion of yeast and rising dough will take place to help her understand the
chemistry of baking.
60 Today was a special day in the Batt School. We celebrated the Senior HUNTER"S
Graduation..... Arianna participated in Musical as well as fun eating cake for Hunter.
The students all watched a presentation crowning Hunter as the newest success story
here at the BATT SCHOOL. It was a nice learning experience and a much deserved celebration.
