Lemon Mini Cupcakes with Strawberry Buttercream Frosting
Lesson Outline
Today Gwendolyn made Lemon Mini Cupcakes with Strawberry Buttercream frosting. Gwendolyn creamed together room temperature butter and sugar on medium-high until it was light and fluffy. She then added one egg at a time. Once the eggs were fully incorporated Gwendolyn added the juices of three lemons and a little bit of lemon zest. Next, she added the dry ingredients. Gwendolyn divided the batter evenly among the prepared mini muffin cups. We baked the cupcakes for about 15 minutes. While the mini cupcakes were baking Gwendolyn prepared the Strawberry Buttercream frosting. Gwendolyn placed the butter, vanilla and strawberry jam into the mixer. Next, she added sugar and milk. We put the buttercream in a pastry bag with a large open tip. Gwendolyn then piped the frosting onto the cupcakes. The cupcakes turned out light, warm and refreshing. Great job, Gwendolyn!
Today Gwendolyn and I discussed the spelling patterns for this week- ant, ance, ent and ence. She looked for examples and made a list of word pairs. When she was finished, she began an opinion piece. We talked about the components of these types of pieces. She chose a topic and began brainstorming. She read silently from her chapter book for the final 10 minutes of class.
Gwendolyn and I did a fun project today for Earth Day. She made a globe using paper mache. When it hardens, she will paint it and add all appropriate geographical images and parts to make it look like the Earth. We did some research to find ways to celebrate Earth day, to know what it promotes, and discover new ways to preserve, conserve, recycle and protect the earth and its resources. We read about alternate sources of energy - wind farms, solar power, and climate change and global warming. She will attach a message to her Earth and hang it from our ceiling in time for earth day later this month. We watched a short video about climate change. We continued with U.S. History in the textbook to learn more about the time period between World War I and II - the boom and the bust, the roaring twenties and the great depression.
Gwendolyn baked chocolate chip cookies and focused on estimation. She estimated the amount of ingredients and then measured it accurately. She compared the estimation to the exact measurement and determined if she was close or not close. She identified equivalent fractions for the fractions.
